My favourite emulsifier

Aren't you often overwhelmed by the choice of emulsifiers available to you and don't know which one to chose?

Does that happen to you that you have a burst of inspiration and creativity, have received a new oil or butter, have a special order and have already a rough idea which oils and active ingredients to use but as you stumble upon the emulsifier choice, you don't know where to start?

Well, this happens to all of us and there is no single emulsifier that could cover all your requirements for all your formulations. In this post I've tried to answer some of your questions, or rather tried to suggest you some important questions to ask before you go for "emulsifier shopping".
